Just Hatched: Crispy Bird

Patachou Inc. is proud to announce the opening of a new restaurant, Crispy Bird®, at 49th and Pennsylvania. Crispy Bird®, as the name implies, will serve fried chicken, Patachou-style, along with considered sides, breads, desserts, wine and beer.

Crispy Bird® will open under the French-trained eye of David Hoover, who recently graduated from cooking school in Paris and a stage at Noma in Copenhagen. Far from the average fried chicken shack, Crispy Bird® will feature chicken with a pedigree – we have longstanding relationships with our local chicken farmers and our birds are GMO and antibiotic free, and are vertically raised. Our vegetables are organic and seasonal, desserts and breads are made in house by the Patachou Inc. baker daily. Gluten free, vegetarian and vegan options will be readily and thoughtfully available. Look for a late fall opening. 

Additionally, we are going to use the Crispy Bird® space at 49th and Penn as an incubator for new brands that are hatching next from Patachou Inc.
