Public Greens (Indianapolis, IN): When you walk into Martha Hoover’s Public Greens, there’s a sign by the front door with the outline of the state of Indiana and this slogan: “Real food belongs in all zip codes.” Public Greens matters not just because it sells farm-fresh goodness at affordable prices (imagine if Blue Hill at Stone Barns opened a laid-back cafeteria), but because its profits are devoted to feeding hungry schoolkids around the state.
